Here's a yummy addition to the list
Mock Tuna
1 cup of Organic Almonds
1 cup of Organic Sunflower Seeds
1/2 cup of Organic Cashews
8 tablespoons of fresh Organic Lemon Juice
1 teaspoon of Sea Salt
1 cup of Organic Celery chopped up
1 cup Organic Red Bell Peppers chopped up
1 cup of Organic Onions chopped up
1 cup of Bubbies Dill Pickles chopped up, from the health food store (these are raw)
I soak the Nuts and Sunflowers Seeds over night, the Almonds I soak longer if I have time, but change the water and rinse them. Maybe 18 hours if I have time. Rinse all Soaked Nuts and Seeds and drain. I put them in a food processor. It will be too thick to turn. I add the Lemon Juice. If it is still too thick to turn add 2 more Tablespoons of Lemon Juice or just water.
If I add more Lemon Juice sometimes I have to add just a little more salt.
I do not remove the brown covering off the Almonds. Not enough time and too much work. If they have been soaked well the brown covering will just mixed with everything else. Do NOT dehydrate the Nuts after soaking. I have used 1/4 cup of Cashews but increased it to 1/2 to make a little more Mock Tuna since people like it. Mix nuts and seeds well until smooth as able to get it.
I use a small food processor to chop up the Celery, Onion, Bell Pepper and Dill Pickles. I just pulse it with the food processor. I do each one separate, it is a very small food processor. I drain the Celery, Onion, Red pepper, but do not drain the Dill Pickles since this makes the flavor people seem to like. I like to use Mild Onions, and the green or spring onion is the best, Martins has organic ones, but often do not look good. So most of the time I use Organic Onions from Nutrition Works. These usually are not mild.
Mix the chopped up Celery, Onion, Red Pepper, and Dill Pickles by hand to the base. Chill or put in chilled bowl.
