does anyone have a good recipe for Italian style salad dressing without vinegar. I have had good Italian dressing without vinegar. It is made with lemon juice. I tried to make it myself, but it didn't turn out great.

This recipe is one my son enjoys eating :

1 Ib very firm tofu                 1/2 tsp onion powder

1/4 cup cashews                  1/4 tsp garlic powder

1/2 cup water                       1/2 tsp lemon juice

1/8 tsp Tumeric                      1/4 tsp salt

1 1/2 TBsp Mckay chicken seasoning

1/2 TBsp Nutritional yeast.

1  Press the tofu between paper towels to absorb some of the water.

Crumble ro consistency of cottage cheese. (potato masher works well).

2  Place tofu in the skillet and cook uncovered, so moisture from the tofu evaporates and it becomes drier.

Stir occasionally to prevent sticking and promote an even browning.

3  In a blender, whiz all remaining ingredients until smooth.

4  Add the blender contents to the skillet and cook about 5 mins or until the mixture is thickened.

5  Serve over cooked cornmeal mash with oven fried or shredded potatoes or tomato marinara sauce.

2 cups macaroni noodles or favourite wholegrain

4 cups water

2 TBsp marg (soya/non-dairy)

1TBsp heaping, Toffuti better than sour cream

1 TBsp lemon juice

2tsp salt

1pkg vegan cheddar cheese (grated)

1/2 pkg vegan mozzarella cheese (grated

1/2 pkg vegan moterey Jack cheese (grated)

1/2 cup Nutritional yeast flakes?more to taste

2 cups plain soy milk more/less prefered

garlic powder

McKays no MSG chicken style seasoning

Salt to taste

Grate cheese and mix evenly

Boil macaroni in the water to desired tenderness.  Drain and immediately add marg.

3/4 of the cheese and toffuti.

Stir, letting the heat from the macaroni melt the marg, cheese and toffuti.

Add nutritional yeast flakes, lemon juice, salt and milk.

Add additional seasonings to taste.

Place in a casserole dish and add remaining grated cheese to the top.

Cover and bake at 350degrees about 30 mins (cheese on top should be melted).

Uncover and turn the oven to broil.

Broil macaroni to desired browness.

Remove from oven and serve.

(Can be served with vegetables or salad)

Dairy lovers would even enjoy this without the dairy, as my dad did and he has tasted the mac cheese made with dairy.  One can eat as much of this with no worries as it is healthy and no calories to count.  My son's friends enjoyed this too.

Try for yourselves and see.
