Challenging subject. If you don't feel like giving away food. All I can say is anything risen with yeast as well as Gluten is probably the culpret.

Everybody can make cookies lol! But local tradition whole foods can also be gluten free. Not every culture has beaten the well troden path to Wheat, Barley, Rye, etc form of slavery. It chokes.

I'm building up speed to my next money making Portfolio. erhh I mean cute website. But seriously write a book instead etc. lol.

If your thinking of Gluten free. Try Teff grain or Sorghum flour. Going on holiday can bee a boon for building confidence in the Kitchen folks. The gloves are off.

 I enjoy Glutten products, would be interested to know more about preperation methods, as in what could be made fom it. I have heard of some that cannot have Gluten based products, it is strange but just a fact, also knowing it is a plant based food. I went to some fellow belivers home for barbeque gluttten stakes, pretty good, though the taste is much of what glutten tastes like in regular cooking, for the reason it was prepared in Tin Foil... again still good though.
